Niseko’s famous powder, night-skiing laps and lively après-ski scene are getting another attraction this winter, with international restaurant group Zuma opening a seasonal pop-up in Hirafu for the 2026/27 northern hemisphere ski season.

Just a four-minute drive from the Niseko Tokyu Grand HIRAFU ski slopes, Zuma Niseko will offer skiers and snowboarders a place to swap ski boots for cocktails and contemporary Japanese dining after a day on the mountain. Opening daily from 3pm, the restaurant will move from après-ski drinks into dinner service from 5pm, with a DJ adding to the atmosphere into the evening.

The opening marks Zuma’s first venture into Japan, a significant milestone for the brand as it approaches its 25th anniversary. Since launching in London in 2002, Zuma has expanded to destinations around the world, establishing a reputation for its contemporary take on Japanese cuisine and high-energy dining experience.

The Niseko venue combines Zuma’s signature aesthetic with Japanese influences and winter-inspired details. Timber-slatted ceilings, bespoke wood-chip floor lamps and wool bouclé seating create a warm atmosphere, while patterned bronze window screens filter the winter light. A private dining room features hand-carved teak screens inspired by snowflakes.

At the centre of the restaurant is a robata counter crafted from Japanese-sourced Date Kan stone, complemented by glazed ceramic tiles in rich red tones. A dedicated Chef’s Table overlooks the open kitchen, while a front-of-house wine cellar showcases the restaurant’s selection of sake, international wines and Japanese whiskies.

The menu follows Zuma’s established approach to contemporary Japanese cuisine, with freshly prepared nigiri and sashimi alongside signature dishes from the main kitchen and robata grill. Expect bold flavours, quality ingredients and the umami-rich cooking that has become a hallmark of the brand.

With capacity for up to 141 guests, the restaurant will operate seven days a week, from 3pm until midnight. Groups can gather in the main restaurant, while a private dining room accommodates up to 12 guests. Flexible seating arrangements can also cater for parties of 10 to 20, offering an alternative to dining in a private chalet.

For Zuma, the Niseko opening is also a return to the country that inspired its culinary identity. The brand has established a presence in major cities and resort destinations worldwide, including Hong Kong, Dubai, New York, Rome and Vail. Its seasonal venues have also taken the concept to popular alpine destinations such as Kitzbühel, Gstaad and Cortina.

“After more than two decades of bringing contemporary Japanese cuisine to some of the world’s leading destinations, making our debut in Japan is an incredibly special milestone for Zuma,” said Sven Koch, chief executive officer of the Azumi Group. “As we approach our 25th anniversary, opening in the country that inspired the brand and celebrating our Japanese heritage feels like a natural and meaningful moment in our journey. This is one of the most exciting projects our teams have ever been part of, and we look forward to welcoming guests to experience our signature flavours and vibrant energy in Niseko this winter.”
